There is a bunch of creatures that do not follow your -1/-1 counter scheme such as Wasteland Scorpion, razaketh, the foulblooded , Colossapede, Samut, Voice of Dissent and Doomed Dissenter
If anything get yourself a playset of Obelisk Spider and Nest of Scarabs since it turns your -1/-1 counters into something other than creature removal.

I recommend the following changes:
Cut 2 Colossapede, 2 Bitterbow Sharpshooters, 2 Wall of Forgotten Pharaohs, 4 Aven of Enduring Hope, 2 Winged Shepherd, 1 Sandwurm Convergence, 1 Greater Sandwurm, 1 Mirage Mirror, 2 Life goes on.
Add 3 Rhonas's Stalwart, 1 Resilient Khenra, 1 Gideon's Defeat, 1 Dauntless Aven, 1 Tah-Crop Elite, 1 Vizier of the True, 1 Rhet-Crop Spearmaster, 1 Trial of Solidarity, 1 Sunscourge Champion, 2 Bitterblade Warrior, 1 Unwavering Initiate, 1 Initiate's Companion , 1 Naga Vitalist, 1 Act of Heroism.
The biggest problem of your current version is the mana curve, you have way too many mana intensive cards and very little ramp, so i would cut the 5+ CMC cards for the aggressive 2 and 3 drops from your card pool and play a more aggro version of the deck.

I think Soulstinger may be the boss you're looking for.
You just have to work your deck a bit to make better synergies with it.
For example, if you put its -1/-1 Counters on Festering Mummy they will kill the Mummy, which will then allow you to put a -1/-1 Counter on an Opponent Creature.
I'm unsure why you are limiting yourself to .
You are creating an almost impossible situation to build a competitive deck, if it is to be Pauper, Mono-Black, and only built with cards from the latest set.
If you added you could play a big fatty in Greater Sandwurm, as well as play good support cards like Haze of Pollen, Stinging Shot, and Shed Weakness.
That last card also synergises well with Soulstinger.
Colossapede is another big fatty in .
My strong advice would be to not limit yourself to Amonkhet cards.
If you do want to proceed that way then I would strongly suggest that you add to the deck.
Otherwise you will end up with a deck that will be frustrating to play, and will win very rarely, if at all.
