Planeswalker ability timing question, when doubled

Simply put, I have Lithoform Engine on the BF, as well as Merieke Ri Berit and a host of creatures that tap to untap her, or tap to do other things, and all of them have been tapped out early in my turn. I also have Jace, Ingenious Mind-Mage on the BF and +1 him to untap all my creatures, then use Lithoform Engine's first ability to copy the activated ability of Jace. My question is if, after the initial untap-round from Jace, I can then tap creatures to use their abilities before the second round of Jace untaps hit? Do I need to sequence it a certain way for it to work, or do planeswalker abilities limit what I can do between the Jace effects...?

Since each ability is separate on the stack, you can respond to the original Jace by activating more abilities - if they are not limited by a sorcery speed clause (ie Bloodpyre Elemental ).

Yes, the stack works on a Last-in/First-out system, and you will have the opportunity to use instant-speed abilities (and cast instant speed spells) before anything resolves.

In your case, the stack would look like this (assuming nobody else does anything):

+1 Jace - Jace's ability goes on the stack

Use Lithoform Engine's first ability - this ability goes on the stack.

Lithoform Engine's ability resolves, copying Jace's +1 ability. The Copy of Jace's +1 ability goes on the stack.

Copy of Jace's +1 resolves. You untap all creatures you control.

Merieke's untap ability triggers, goes on the stack.

Merieke's untap ability resolves, creature gets destroyed.

Use Merike's tap ability. It goes on the stack

It resolves, you gain control of target creature.

Use something else's ability to untap Merieke - goes on the stack

Resolves, untapping Merieke

Merieke's triggered ability triggers - goes on stack

etc. until you're done tapping and untapping her.

Jace's +1 ability resolves, untapping all your creatures.

I guess I've been under the impression that each tap-action had to enter the stack before any of them could resolve, or else the Jace +1 would resole and untap everything first. I didn't know each tap could resolve before the second +1 would resolve on the stack. It's amazing how much I find I keep learning about rules in this game... I swear it never ends... :)
