Merieke Ri Berit and Karn, Silver Golem

So I turn my opponent's Sol Ring into a creature with Karn, Silver Golem, steal it with Merieke Ri Berit, and let the turn end. I understand that Merieke needing to stay in play will continue to affect the Sol Ring, but will her untapping still destroy it, or does it have to be a creature for that to fully trigger? Thanks in advance!

Untapping Merieke will still destroy the Sol Ring. The "creature" in "destroy that creature" is just a reference to the object that was noted as a creature earlier in the text of the effect. It doesn't require that object to remain a creature in order to be affected by that part of the ability. If it did, it would specifically say something like "if it is still a creature".

Say I turn an opponent's artifact into a creature with Karn, flicker Deadeye Navigator and soulbond it to that artifact creature, steal it with Merieke, then flicker the artifact creature with Deadeye Navigator... I'm assuming the fact it comes back as only an artifact will not prevent it from coming back into play under my control, correct? It's not a cheap way to go about stealing artifacts, and my opponent can also potentially flicker it and reset the whole process, but it's worth it with some artifacts if I can keep them.

And at the same time, I'm assuming Nightmare Shepherd would not allow me to make a copy of a dying artifact creature from Merieke untapping? I'm assuming the artifact will not retain its creature type long enough for the Shepherd to make a copy of it? Would it even get to exile it at all?

Deadeye Navigator works but you need to steal the creature before the soulbond happens. Note that the reminder text for soulbond says the creatures remain paired "for as long as you control both of them", so trying to bond with an opponent's creature doesn't work. After you steal the creature, pair it and activate the ability, the object will return to the battlefield under your control. The effect isn't written to be dependent on whether the object is still a creature at that point.

Nightmare Shepherd works. "Dies" triggers and other leaves-the-battlefield triggers use information from the last moment an object was on the battlefield to determine if and how they trigger. A nontoken creature you controlled died, so you will get the effect of the Shepherd's trigger.

And with Nightmare Shepherd, if that was an artifact I turned into a creature before it died, will the copy I receive come back as a 1/1 creature as well, or just as the original non-creature artifact?

And thank you, I missed that last bit of soulbond reminder text! Looked like an even more interesting mechanic if it let me bond with an opponent's creature! Alas...

If the original was a non-creature artifact then Nightmare Shepherd's copy will also be a non-creature. It will technically have P/T 1/1 but won't be able to do anything with it since it isn't a creature (consider an un-crewed Vehicle, which is the most common example of a non-creature having P/T).
