How does combat work with death touch and trample

I have Wilson, Refined Grizzly with the background Raised by Giants. My opponent block with 3 1/1 creatures, one has death touch. Can I choose to put all my damage on one creature, or do I have to attack lethal to all creatures?

I'm not sure what you are going for here, but yes you could assign all of the damage to one creature. You will not be able to assign any to the player until lethal has been assigned to all of the creatures, but if you like you could assign 10 to one of the 1/1s.

What I mean is Wilson, Refined Grizzly has trample, so if I assign 10 damage to one of the three 1/1 creatures does my opponent still take 9?

No, trample changes the rules for damage assignment that allows you to assign damage to a player AFTER all blocking creatures have had lethal damage assigned. Though I am still confused where deathtouch comes into this.

702.19b The controller of an attacking creature with trample first assigns damage to the creature(s) blocking it. Once all those blocking creatures are assigned lethal damage, any excess damage is assigned as its controller chooses among those blocking creatures and the player or planeswalker the creature is attacking.
