Grey Merchant of Asphodel + Gift of Immortality

does it go infinite if gary is sacrificed beginning of end step, or it only triggers once?

Gary would return immediately, but since the beginning of the end step (which is when Gift of Immortality would return) has already passed , Gift wouldn't return until the beginning of the next turn's end step.

Nope, not infinite.

Let's say you have Gray Merchant of Asphodel with Gift of Immortality . If Gary dies/is sacrificed, Gift of Immortality will trigger, bringing Gary back to the battlefield. Now, if this happens in the end step, then Gift of Immortality will return it self at the end of next turn- the "beginning of the end step" is basically "as you move into the end step". It is still a good combination though.

ljs54321 & williamgp99 are correct. When a creature enchanted by Gift of Immortality dies it returns to the battlefield right away, then it must wait for the end of turn step for the second part of its ability to resolve. These triggers only occur at the beginning of that step and will not trigger if the step has already begun, see:

513.3 If a permanent with an ability that triggers at the beginning of the end step enters the battlefield during this step, that ability wont trigger until the next turns end step. Likewise, if a delayed triggered ability that triggers at the beginning of the next end step is created during this step, that ability wont trigger until the next turns end step. In other words, the step doesnt back up so those abilities can go on the stack. This rule applies only to triggered abilities; it doesnt apply to continuous effects whose durations say until end of turn or this turn. (See rule 514, Cleanup Step.)

There's definitely stuff you can do with it, and you can make it happen every turn (both yours and your opponent's) if you play it right - but no, not infinite.
