Let's say I control Setessan Champion and my Opponent controls Spirit of the Labyrinth . Into this boardstate I now cast a On Thin Ice . Can I stack the triggers so that the Ice resolves before the triggered ability of the Champion and I thus get to draw a card?

Yes. As both triggers trigger at the same time, you choose the order they are put on the stack. You can choose to exile Spirit of the Labyrinth before resolving the trigger to draw a card.
