Can you activate the ability of Sage of Hours if you take it away with Portent of Betrayal ?

I cast Portent of Betrayal on my opponent's Sage of Hours then use the take extra turn thing. My opponent had enough +1 counters on it before hand.

In many cases, I see no situation where your opponent will ever leave a Sage of Hours with 5 counters for the taking, aside from abilities like Mindslaver

You could, if they don't activate Sage of Hours ability in response to you taking it, and just allow you to rack it.
