Can I pay 2 life so a shockland enters untapped from Farseek spells?

Basically that. I've got a 3-color ramp deck with a lot of duals, some of which are shocks (Temple Garden, Stomping Ground, etc.). I use a good bit of Farseek - type spells to get my mana fixing on and wasn't 100% sure if I could just use the shock clause so it enters untapped. I'm fairly certain I can't cuz Farseek's spell effects would override the shockland's ETB ability, BUT I just wanted to ask and make sure I haven't been playing that deck as optimally as I can.

You cannot.

Even if you pay the 2 life, it will still enter tapped via Farseek's effect. This is because, to my knowledge, both the replacement effects can be applied one after the other.

If you decide to use the land's replacement effect, you can pay the 2 life, now it's entering untapped. But now, Farseek's replacement effect is applicable and is applied as well, having the land enter tapped again.

On the other hand, if you decide to apply Farseek's replacement effect first, it will enter tapped, and the land's replacement effect is no longer applicable, so it merely enters tapped as well.

For completeness' sake, the "put it onto the battlefield tapped" instruction on Farseek isn't a replacement effect, it's just part of the spell's effect. I don't know if there are any in-game situations where making this distinction would actually matter, but Magic is strange sometimes.

The point is that even if you pay life there's still an effect telling you to put the land onto the battlefield tapped (notice that the ability on the land itself only gives you a special instruction if you don't pay life).
