Can I order triggered abilities that occur on the same time?

If I was to play an Akroan Hoplite that had a Launch the Fleet casted on it. First, can I order the triggers of "when this creature attacks." Secondly, does akroan hoplite's trigger count the "attacking" tokens, or does it only count for creatures that declare attacks?

If multiple triggered abilities controlled by the same player are trying to go onto the stack at the same time, that player decides what order to put them onto the stack. So yes, you can order your "whenever (this guy) attacks" triggers in a way such that Akroan Hoplite's ability will resolve after all the Launch the Fleet tokens are created.
Akroan Hoplite's ability says it counts "attacking" creatures, not creatures that "attacked". Because Launch the Fleet creates creature tokens that are "attacking", they'll be counted for Hoplite's ability.
