Archfiend of Ifnir and discarding hand

Let's say I have Archfiend of Ifnir and Lion's Eye Diamond .in play with 7 cards in hand. If I sac LED to discard my hand, will it trigger Archfiend once and only put one counter on each opponent's creature or it will trigger per discarded card which will put 7 counters?

It will trigger once for each card discarded so in your case 7 times total. This is because it is worded as "Whenever you cycle or discard a card do X". If it was worded as "Whenever you cycle or discard one or more cards do X" it would trigger once since you discard your hand all at once and the second wording cares about instances of an action and not quantity of discarded cards.
