What are some good cards that benefit me when I tap/untap them?
Not abilities that use mana. Otherwise my untap cards wouldn't work.

Depending on competitiveness and mana curve etc. I avoided cards that use the exert mechanic and otherwise required combat phases to trigger their tap effects. All of these cards do something when either tapped/untapped or in some cases both. This is by no means an exhaustive list

Are you looking for cards that reward tapping/untapping things, or cards that want to be tapped/untapped? Or both?

Well if you want to tap/untap your own creatures the inspired ability goes well, but there are not many worth using. You could also look for cards with similar wording to Renegade Wheelsmith and Stonybrook Schoolmaster.
Otherwise there are a couple cards like Azami, Lady of Scrolls that allows you to tap your own creatures to draw cards and then you could untap and repeat.

I've been trying to figure this out: the problem of the infinite combo of tapping/untapping. Since tapping is unidirectional, it only works when two untapping cards target each other. However, I don't think it can go any further than that. It would take either an infinite loop of untapping/tapping, or the card that needs to be oscillated is an untapping card itself.

I'm trying to find something that has static buff abilities that I can use with my 2-card infinite combo of pointing one untap at another untap. For instance, Judge of Currents. But this seems prohibitively difficult in pioneer.

Instill Energy used to be the apex of untap-cool... but that was back before I knew what was rare/uncommon so I have no idea if you’re allowed to use it (or if you can even find them anymore)

Imperious Perfect has a sweet tap ability. But I think you mean just from being tapped and untapped? If so, the inspire mechanic is entirely based off of being untapped. There aren’t a ton of good ones, but one will draw a card.
